Wookies and Workout Buddies!

Last week, I turned 24 years young, and my family celebrated by eating waffles with strawberries and homemade syrup.  YUM!  This meal has always been a favorite of mine, and I could pretty much eat it everyday, for breakfast, lunch, or dinner…or dessert.  Which brings me to sharing a secret recipe for waffle cookies.  What???  WAFFLE COOKIES, aka. “Wookies”.  These babies are so stinkin quick to make, and just as delicious as (but infinitely more fun than) their oven-baked counterparts.  My lovely assistant (my mother) and I whipped them up in less than 15 minutes.  While the recipe makes enough for 12 cookies (3 whole, 4-leafed waffles), I was able to put away 4 of them with my afternoon tea.  They are also great under heaps of vanilla ice cream.  Heaps and heaps.

                                      Wookies
  • 1/2 c. applesauce (or 1 stick of butter, melted, for richer cookies)…applesauce works great though!
  • 1/2 c. brown sugar
  • 2 eggs
  • 1 t. vanilla
  • 3/4 c. whole wheat flour (or all-purpose)
  • 1/2 t. baking soda
  • 1/4 t. salt
  • 1.5 c. oats (not instant)
  • 1 c. chocolate chips (or M&Ms)
  • 1 t. cinnamon
  • nonstick cooking spray

  1. Whisk together first 4 ingredients
  2. Stir in remaining ingredients
  3. Spray and prep waffle Iron
  4. Spread 1/3 of batter into iron
  5. Cook 1.5-3 minutes
  6. Top with butter, syrup, powdered sugar, jam, whipped cream, berries, ice cream…

Help a cookie out…Spread into iron w/ a spoon.

This morning, I had the pleasure of going on a beautiful beach run with friend, fellow student, and award-winning blogger, Jessica.  We chatted about our shared passion for nutrition, fitness, and blogging.  Check out her fun foodie website here.

One of my favorite topics from this morning’s run, which my good friend Lauren, from Modern Taste, recently wrote about, is the concept of watch-less running.  Jessica and I both ran watch-free…this is something that I love to do, especially when my chunky Garmin GPS watch is dead or needs charging.  There is something refreshing and simple about not keeping track of distance, time, pace, heartrate, etc.  It takes me back to the real reason why I run: just because I love to do it!

Well, friends…

In a previous post on curried lentils, I neglected to mention that I was actually entering the recipe in a contest through the Pure Bar website.  You see, I have a friend who works for Pure Bar, and she mentioned that they were doing a recipe contest and that I should enter.  The next day, I felt inspired to experiment in the kitchen, and prayed for an idea…The red lentils and coconut cream that I had purchased from Trader Joe’s came to mind.  Until then, I had no plan for these items, so figured I should use them!  The canned pineapple and curry powder in the pantry were also looking quite attractive that day…

Anyways, I seriously did not think I had a chance to win this contest, but convinced myself that it was a good opportunity to do something I love to do: cook and create in the kitchen…and eat 🙂  While I was not “wowed” by the outcome of the recipe, I submitted the entry to Pure Bar, and pretty much forgot about the contest immediately.  

AND THEN, this morning I received a very surprising email from the founder of Pure Bar, congratulating me that I had actually won the contest in the category of “entree”. WHAT?? Praise the Lord!  My reward: $50 to Whole Foods, and 3 boxes of delicious Pure Bars…plus, a shot at the Grand Prize of a trip to New York.

chips with dips and strawberry margs :)

Sometimes, you just gotta have copious amounts of tortilla chips, guacamole, bean dip, and homemade strawberry margaritas for dinner!!  Great friend date fuel 🙂


Strawberry Marg (serves 2):

1 cup frozen strawberries
2 large lemons, halved and squeezed
1/2 c. water (optional…omit for stronger flavor)
4-6 T. simple syrup, to taste
2 shots tequila
ice (to desired texture) …about 3 good handfuls
Blend and serve in glasses with salted rims!
