Up Next,
Lemonade with no added sugars…
Just throw these into your juicer:
4-5 peeled lemons,
2-3 cups strawberries,
6-8 peeled-and-cored mangos.
…and Voila!

I highly recommend getting a juicer!  Such a swell investment.

And Now…the simplest, scrumptious-est, egg casserole you’ve ever dreamed of:

“Mock Chile Relleno” Egg Casserole (Recipe Courtesy of Beverly Foster)

-Preheat oven to 400F.
-Beat 10 eggs in a large bowl.
-Add 1/2 c. flour, 1 tsp. baking powder, and a dash of salt, and stir until smooth.
-Add 1 stick of melted butter (1/2 c.), 2 x small (7oz) cans whole green chiles (drained), 1 pint (2 c) cottage cheese, and 1 lb jack cheese (grated).
-Mix to blend
-Pour into 9x13x2″ baking pan, and press into pan.
-Bake for 15 minutes, then lower the oven temp. to 350 and continue baking for 35-40 minutes, until fork inserted in middle comes out clean.
-Sprinkle top with cheese
-Serve with salsa and plain yogurt/sour cream

I got to eat mine with Brice’s Famous Banana Pancakes!
