Pump it Up

…with Pump-kin!

Jessica and I enjoyed another glorious morning of running at the beach, working up a sweat and chatting about all things food and exercise and nutrition.  I also got to meet a friend of hers, Rob, who shared his cool story: he lost 100 lbs this year through running and eating well, and even ran a marathon (his first ever) in 3 hours, 30 minutes!!  His passion for good health and love for all people is truly inspiring.

After our sweat session, I hurried home to snack on a pumpkin…errr, well, some pumpkin-flavored goodness: Trader Joe’s herbal pumpkin rooibos tea (I love tea time!) and a pumpkin greek yogurt parfait…um, on a pumpkin placemat…sheesh!

What is in that good looking bowl up there^???

Let me tell you…layers of:

  • TJ’s Pumpkin Greek Yogurt
  • A whole peach, sliced
  • A handful of spiced pecans (recipe to appear next week!)
  • A handful of pomegranate seeds
  • Half of a banana, sliced
  • A handful of homemade granola
  • A Sprinkle of cinnamon
  • A spoon 😉

FFF:
Pumpkin is not only a generous provider of heaps of fiber, Vitamin A, Vitamin C, Potassium…but also packs in some vitamin E, Iron, Magnesium and some B Vitamins to boot…pretty darned good excuse to eat an extra slice of pumpkin pie.
