Spooky Snacks and Healthy Halloween Treats

Last Wednesday’s menu…

Breakfastness

(coffee)

Smoothie

  • 1/2 c. nf plain greek yogurt
  • 1 banana
  • 3/4 c. frozen mixed berries
  • 3/4 c. fresh pineapple/strawberry (or other) juice
With Homemade Granola!

Late(ish) Lunch
…I love LLs, because if my stomach is full at 2pm, I can have a snack in the evening, and maybe a lil something sweet later, and be good to go.  Eating a satisfying lunch helps me stay energized during the afternoon, whereas big evening meals just make me fell “bleh” and heavy.  Of course, sometimes my lifestyle does not allow for eating at odd hours.  But, for today, study break at home = late lunch at 2pm:

2 glasses of juice from this morning (I just drank a whole pineapple :O)

Fresh Mango/Peach salsa
Tortilla Chips
Smoked Salmon-Gouda Quesadilla

For the salsa:

Chop- 1 peach, 1/2 mango, 1/4 small onion, 1/4 c. fresh parsley or cilantro, 1/2 red bell pepper.
Stir chopped ingredients with juice of 1/2 lemon, fresh ground black pepper & salt (to taste)

For the quesadilla:

Sautee 2 sliced mushrooms.
Layer smoked salmon, sliced gouda cheese, sauteed mushroom, and 1 tomato (sliced) on top of 1 medium corn/wheat tortilla.
Heat tortilla (with ingredients on top) in medium pan over low-medium heat until cheese is melted and all toppings are warmed.
Sprinkle with pepper/salt to taste
*stuff with fresh salsa and/or serve with chips and salsa


corn + wheat = delicious

Afternoon snack:

More chips and salsa!…I ate them too fast to nab a picture.

Dessert:

Self-serve

Frozen Fiesta of Flavors

FFF:
(Smoked) Salmon is a great source of the Omega 3 fatty acid EPA, which has many proposed benefits including improved heart health.  EPA is not made very efficiently in the body, so it is best to take it in through the diet, preferably via 2 servings algae-consuming fish (like salmon) per week.  If consistent dietary fish intake is not plausible, supplementation with fish oil or vegan EPA (algae) may be beneficial.
