Skillet Cake and Onion Eggs

Another sweet breakfast with my sweet boyfriend…


Cake and eggs — not to be confused with steak and eggs. 


His.

and hers..
There were eggs!
And cake!


Would you like to try some cake??

Berry Skillet Cake 

1 c. whole wheat flour
2 t. baking powder
1/2 c. sugar, divided
1/4 t. salt
2/3 c. almond milk (or other milk…)
oil to coat panfresh berries (or frozen defrosted)
1/4 c. sliced or chopped almonds

Preheat oven to 350F.  In a medium bowl, whisk 1/4 c. of the sugar with flour, baking powder, and salt.  Add milk and almonds, and set aside.  Cover a (greased) cast iron skillet with berries to coat bottom.  Sprinkle remaining sugar over berries, and bake in oven to bubble berries.  Remove, and stir in flour mixture (or pour mixture on top of berries) with a spatula.  Bake 25-30 minutes, until brown and bubbly.  Dust with powdered sugar/syrup/honey, slice and serve!


Onion Egg Rings

Just in case you have ever wondered how to cook eggs inside of rings of onion (great idea!)…First, slice an onion in 1/2 inch slices to create rings.  Choose largest rings, and place in pan.  On medium heat, brown onion rings, and flip.  Place italian herbs inside rings if desired.  Break eggs into onion rings, cover pan with lid, and cook to desired egg cooked-ness (I like my yokes a little runny).  Discard (frantically eat) any egg white that has spilled outside of the rings to avoid being accused of sloppy egg-making.  [make sure that nobody sees you doing this as it may look a bit gross]. 

Brioled Grapefruit

Just peel and section a grapefruit (get rid of the white gunk).  Place segments on parchment-lined baking sheet.Sprinkle with sugar.Broil about 3 minutes.…ta da!!
