It has been a while since I posted purely on food, so I had to share this treat with you:

Banana-Peanut Butter-Popovers

I must confess, this is straight from Pinterest.
Perfect dessert/(midnight) snack.
Excellent pre-workout fuel with…
Heaps of carbs (flour, banana, sugar) for quick energy,
A dab of protein (egg whites) for recovery,
Plus a smidgeon of fat (egg yolks, peanut butter) for satiety.
Super easy to make: 5 min prepping, 25 min baking, 30 seconds eating time.
Taste like sweet, fluffy banana pancakes with a hint of PB.
Technically, these aren’t really popovers, because I baked them in muffin tins, but they are much more fun-sized.

For the popovers…

Preheat oven to 375 degrees.
Place buttered muffin tin inside oven for 3-5 minutes (while mixing batter).
Beat/whisk 3 eggs in medium bowl.
Whisk in 1 c milk, 2 t vanilla, 2 T (all natural) peanut butter, 3 T sugar, and a pinch of salt.
Remove tins from oven, pour batter evenly into muffin tins. Top evenly with slices of 1 whole banana.
Return to oven for 5 minutes.
Lower temperature to 350 degrees, and bake for another 20 minutes.
Serve with powdered sugar, syrup, or whipped cream.

[I made some whipped cream by pouring about 1/2 c whipping cream into a mason jar, shaking until whipped.  I also added 1 T honey and a drop of maple extract.]

*Note: I used Pam spray instead of butter, and I made the mistake of burning the pan in the empty tins while warming in the oven.  If you do use Pam, spray it in after warming the tins, before pouring the batter in.
