
This morning, a desire to make a smoothie out of roasted beets turned into a quest to make a smoothie composed only of ingredients with names beginning in A, B, or C. So fun. And definitely the best beet creation I have concocted so far– I have been in quite the beet frenzy lately…beet juice drinks, cakes, salad…you get the idea.
To roast beets:
wrap in foil
stick in oven for 1 hour + 15-30 minutes until soft (varies with beet size) at 425F
cool and peel
After your beets are chilled out, consider turning them into this creamy, sweet, nutrient-packed meal in a mug. Excellent energizer pre-workout or refueling snack post-workout:
A-B-C Smoothie

1/3 Avocado, medium sized (about 1/3 c.)
1/3 c. Almond milk (or other milk)
1/3-1/2 c. Active cultures (aka. nonfat plain greek yogurt…a bit of a stretch, but still an “A” word)
1/2 Banana (frozen or fresh)
1 c. Berries (frozen preferred)
1 Beet (about 1/3 cup packed, roasted and chilled) + 1/3 c. greens of beet (optional)
1/3-1/2 c. Carrot juice (or orange juice, apple juice or water)
1 handful Cubed/Crushed ice
1 t. Cinnamon (or Cocoa powder)
Instructions: blend all of the above in a Vitamix or other blending device.
The inventors of the English Language and alphabet must have had this smoothie in mind. I am impressed with their foresight into modern blending techniques.
