Red Velvet Beet Pancakes

What’s a girl to do with leftover roasted beets?

Yesterday, as I asked myself this question, peered at my handy “to make” recipe board, and considered the “Pancake Day” occasion, Red Velvet Pancakes seemed like the perfect solution…Just in time for Valentines’ Day!

Red Velvet Beet Pancakes

dry ingredients
1 c all purpose flour
½ c whole wheat flour
2 T wheat germ (or 2 extra T flaxseed)
2 T ground flaxseed
1 T baking powder
1/8 t. salt
1 T cocoa powder
1/3 c. chocolate and/or peanut butter chips

wet ingredients
2 large eggs
1 1/3 c milk (I used almond milk)
1 t vanilla extract
2 T honey
½ c beet (about one whole, roasted, peeled beet)

Whisk together dry ingredients in large mixing bowl.

In a Vitamix or food processor, puree wet ingredients until smooth.  Just blend wet ingredients into dry ingredients with a rubber spatula.

Spray and heat (medium) a skillet.  Use a 1/4 c. measurer to ladel out 2-3 T batter onto skillet at a time.  Once bubbles form on top of pancakes, flip.  Cook additional 2-3 minutes.  Warm in an oven and/or serve.

…We had ours with butter, homemade blueberry syrup, and powdered sugar.

What is cuter than this handsome man eating a heart-shaped pancake?  …I can’t think of anything either!
