This is an easy, refreshing, and scrumptious salad that I love to make on warm days. It makes a great bbq side dish, and an excellent post-workout glycogen and muscle restorer!
1/4 large watermelon
2 lemons, halved
1/2 c. fresh mint leaves, chopped
Cut a large watermelon into quarters. With one quarter, use an ice cream scoop to spoon out hemispheres of watermelon into a large bowl.
Squeeze lemons (no seeds, please) over melon.
Sprinkle feta and mint on top, and toss.
